Enzymes are fragile proteins (temperature sensitive) that are essential to the breaking down of food. Enzymes are easily effected and destroyed (in part) by modern commercial methods, i.e. cooking (Heat History), refrigerating & freezing of Dry Product and flesh foods. Considerable thought should be given to enzyme enhancement. Broad spectrum enzymes are available in supplement form. One might also consider products like Beef tripe which is a wonderful Source of enzymes, proteins, Vitamins, and minerals.
